- Long grain rice200g | 1 1/2 cups
- Chicken livers, roughly chopped200g | 1 1/3 cups
- Olive oil2 tbsp
- Onions, finely diced2 each
- Cranberries, dried110 g | 2/3 cup
- Garlic cloves, finely chopped2 each
- Ground cuminto taste
- Cayenne pepperto taste
- Tabasco sauceto taste
- Chicken stock650 ml
- Spring onions, cut into rings4 each
- Flat leaf parsley, chopped2 tbsp
- Pecans, chopped110g | 2/3 cup
PREPARATION
HOW TO MAKE DIRTY RICE
1. Fry the liver and the stomach in hot oil.
2. Add the onions, cranberries and garlic. Season with cumin, salt, cayenne pepper and Tabasco.
3. Add the rice stirring continuously for 1-2 minutes.
4. Stir in the chicken stock and simmer on a low heat for approximately 20 minutes until the rice has soaked up nearly all the liquid.
5. Add the spring onions, parsley and the nuts and cook for another 3 to 4 minutes.
6. Season with salt and cayenne pepper and serve.
